How to Make Butter from Raw Cream

Simple, satisfying, and a little bit magical the first time you do it.
Making butter at home is one of those things that sounds complicated… until you do it once and realize it’s basically just shaking or mixing cream until it decides to become butter.
Directions
Ingredients
- 2 cups raw cream
- Pinch of salt (optional)
Prep & Time
- Prep Time: 5 minutes
- Mix Time: 10-15 minutes
- Total Time: About 20 minutes
- Yield: ~1/2 to 3/4 cup butter
Instructions
- Bring cream to room temperature
This helps it separate more easily. Cold cream will take longer and make you question your life choices. - Mix or shake
- Using a stand mixer or hand mixer: beat on medium-high
- Using a jar: shake vigorously (great arm workout)
- First, you’ll get whipped cream… keep going.
- Watch for separation
After a few more minutes, the cream will “break” into butter (solid) and buttermilk (liquid). - Strain the buttermilk
Pour off the liquid and save it for baking if you’d like. - Rinse the butter
Rinse the butter under cold water, gently pressing it to remove remaining buttermilk. This helps it last longer. - Add salt (optional)
Mix in a pinch of salt to taste. - Shape and store
Press into a jar or form into a block. Store in the fridge and enjoy.
Ways to Change It Up
Once you’ve made butter once, it’s hard not to start experimenting:
Herb Butter (Savory)
Mix in garlic, rosemary, thyme, or chives. Perfect for steaks, bread, or roasted vegetables.
Honey Butter (Sweet)
Add a drizzle of honey and a pinch of salt for something simple and addictive.
Cinnamon Butter (Dessert-Ready)
Stir in cinnamon and a little maple syrup or sugar – great on toast, pancakes, or anything warm.
Garlic Butter
Fresh garlic + salt = instant upgrade to just about any meal.
