Directions

Ingredients:

  • 1 lb elbow macaroni
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 cup heavy cream
  • 2 cups shredded Alpine cheddar cheese
  • 1 cup shredded Alpine Colby cheese
  • 1 cup shredded Alpine Gouda cheese
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional, for topping)
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish and set aside.
  2. Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.
  3. In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour to create a roux. Cook for 1-2 minutes, stirring constantly, until the roux is golden brown.
  4. Slowly pour in the milk and heavy cream, whisking continuously to prevent lumps from forming. Cook the mixture until it thickens, about 5-7 minutes.
  5. Remove the saucepan from heat and stir in the shredded Alpine cheddar, Colby, and Gouda cheeses until melted and smooth. Season with salt and pepper to taste.
  6. Add the cooked macaroni to the cheese sauce, stirring until well combined.
