  4. Rest steaks with a dab of butter and a sprig of rosemary, tented under foil for 5–10 minutes before serving.

🥓🍺 Side Dish: Bacon & Beer Potatoes (Dad-Approved)

Ingredients:

  • 6–8 red potatoes, thinly sliced
  • 6 slices thick-cut bacon
  • onion, chopped
  • 3 cloves garlic, minced
  • 1/3 cup beer (lager or ale works best)
  • 1 cup shredded cheddar cheese
  • green onions, sliced
  • Salt & pepper to taste

Instructions:

  1. Cook the Bacon:
In a large cast iron skillet over medium heat, cook the bacon until crispy. Remove, crumble, and set aside. Leave 2–3 tablespoons of bacon fat in the skillet.
  2. Sauté Aromatics:
Add the chopped onion to the hot bacon fat and sauté for 2–3 minutes until softened. Add the minced garlic and cook for 1 more minute.
  3. Add the Potatoes:
Stir in the sliced potatoes and spread them in an even layer. Season with salt and pepper.
  4. Cook Until Tender:
Let cook over medium to medium-high heat, flipping every few minutes until the potatoes are golden brown and fork-tender—about 15–20 minutes.
  5. Deglaze with Beer:
Pour in the beer, scraping the pan bottom to lift all the flavor. Cook until the liquid reduces, about 2–3 minutes.
  6. Finish & Serve:
Add the crumbled bacon back in, top with cheddar cheese, and cover the skillet for 1–2 minutes until cheese melts.
  7. Garnish & Serve:
Sprinkle with green onions and serve hot—straight from the skillet.

Serve With:

  • Grilled corn with chipotle butter
  • Ice-cold beersweet tea, or a strong glass of bourbon on ice
  • Cast iron skillet brownies for dessert, if you’re feeling bold
