🥓🍺 Side Dish: Bacon & Beer Potatoes (Dad-Approved)
Ingredients:
- 6–8 red potatoes, thinly sliced
- 6 slices thick-cut bacon
- 1 onion, chopped
- 3 cloves garlic, minced
- 1/3 cup beer (lager or ale works best)
- 1 cup shredded cheddar cheese
- 2 green onions, sliced
- Salt & pepper to taste
Instructions:
- Cook the Bacon:
In a large cast iron skillet over medium heat, cook the bacon until crispy. Remove, crumble, and set aside. Leave 2–3 tablespoons of bacon fat in the skillet. - Sauté Aromatics:
Add the chopped onion to the hot bacon fat and sauté for 2–3 minutes until softened. Add the minced garlic and cook for 1 more minute. - Add the Potatoes:
Stir in the sliced potatoes and spread them in an even layer. Season with salt and pepper. - Cook Until Tender:
Let cook over medium to medium-high heat, flipping every few minutes until the potatoes are golden brown and fork-tender—about 15–20 minutes. - Deglaze with Beer:
Pour in the beer, scraping the pan bottom to lift all the flavor. Cook until the liquid reduces, about 2–3 minutes. - Finish & Serve:
Add the crumbled bacon back in, top with cheddar cheese, and cover the skillet for 1–2 minutes until cheese melts. - Garnish & Serve:
Sprinkle with green onions and serve hot—straight from the skillet.
Serve With:
- Grilled corn with chipotle butter
- Ice-cold beer, sweet tea, or a strong glass of bourbon on ice
- Cast iron skillet brownies for dessert, if you’re feeling bold
