It's a fresh, ham glazed with a sweet and tangy mix of honey, Dijon mustard, and brown sugar, then studded with fragrant cloves. Directions

  1. Preheat your oven to 325°F (165°C).
  2. Rinse the ham under cold water, pat dry, and place it on a rack in a roasting pan. Score the outer layer of the ham in a diamond pattern, and sprinkle with salt and pepper.

  3. Press a clove into the center of each diamond. Drizzle the ham with about half of the honey.

  4. Cover the ham with aluminum foil and bake in the preheated oven. Allow about 20 minutes per pound of meat - a 12-pound ham will take about 4 hours.

  5. In the meantime, mix together the brown sugar, the remaining honey, and Dijon mustard to create a glaze.

  6. During the last 45 minutes of baking, remove the foil and brush the glaze over the ham every 10 minutes.

  7. The ham is done when it reaches an internal temperature of 145°F (63°C). Use a meat thermometer to check this.

  8. Once done, remove the ham from the oven and let it rest for 15 minutes before carving. This allows the juices to redistribute throughout the ham, making it juicier and easier to carve.
