Tex-Mex Tango with Carolina Gold Rice and Pasture-Raised Pork

Ingredients
- (1 Cup) Carolina Gold Rice
- (1 lb) Ground Pork
- (1) Onion, Chopped
- (3) Garlic Cloves, Minced
- (1) Red Bell Pepper, Diced
- (1) Green Bell Pepper, Diced
- (1) Canned (10 oz) diced tomatoes with green chiles
- (1 tsp) Cumin
- (1 tsp) Chili Powder
- (1/2 tsp) Smoked Paprika
- (To Taste) Salt & Pepper
- (1 TBS) Ghee
- (For Garnish) Freshly chopped cilantro
- (For Serving) Lime Wedges
Directions
- Rinse the Carolina Gold Rice under cold water until the water runs clear.

In a saucepan, bring 2 cups of water to a boil. Add the rinsed rice, reduce heat to low, cover, and let it simmer for about 20 minutes, or until the rice is tender and the water is absorbed. Set aside.

In a large skillet, heat the ghee over medium heat. Add the ground pork and cook until browned. Remove the cooked pork from the skillet and set aside.

In the same skillet, add the chopped onion, minced garlic, and diced bell peppers. Cook until the vegetables are tender.

Return the cooked ground pork to the skillet. Add the cooked Carolina Gold Rice, black beans, and diced tomatoes with green chiles to the skillet. Stir to combine.

Season with cumin, chili powder, smoked paprika, salt, and pepper. Stir until everything is well mixed and heated through.

Serve hot, garnished with freshly chopped cilantro and lime wedges on the side for squeezing.
