Ingredients
- (2) Chicken Breasts
- (2 Tbsp) Raw Butter-Salted-1 Pound
- (1 large) onion, chopped
- (3) cloves garlic, minced
- (3) carrots, peeled and sliced
- (3) celery stalks, chopped
- (1) parsnip, peeled and diced
- (1 cup) organic potatoes, diced
- (1 cup) organic sweet potatoes, diced
- (1 cup) organic peas (fresh or frozen)
- (1 cup) organic peas (fresh or frozen)
- (1 tsp) dried thyme
- (1 tsp) dried rosemary
- (1) bay leaf
- (6 cups) Chicken Bone Broth
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Directions
- In a large pot, melt grass-fed butter over medium heat. Add diced chicken and brown on all sides. Remove the chicken from the pot and set it aside.
- In the same pot, add chopped onion and garlic. Sauté until the onions are translucent.
- Add carrots, celery, parsnip, potatoes, and sweet potatoes to the pot. Stir and cook for about 5 minutes.
- Return the browned chicken to the pot. Add dried thyme, rosemary, and the bay leaf. Season with salt and pepper.
- Pour in the homemade chicken broth, ensuring it covers all the ingredients. Bring the stew to a boil, then reduce the heat to low, cover, and let it simmer for about 30-40 minutes or until the vegetables are tender.
- In the last 10 minutes of cooking, add the peas to the pot.
- Once the vegetables are tender and the chicken is cooked through, discard the bay leaf.
- Adjust the seasoning if needed and serve the hearty chicken stew hot, garnished with fresh parsley.
