Cozy Chicken Stew

Ingredients

  • (2) Chicken Breasts
  • (2 Tbsp) Raw Butter-Salted-1 Pound
  • (1 large) onion, chopped
  • (3) cloves garlic, minced
  • (3) carrots, peeled and sliced
  • (3) celery stalks, chopped
  • (1) parsnip, peeled and diced
  • (1 cup) organic potatoes, diced
  • (1 cup) organic sweet potatoes, diced
  • (1 cup) organic peas (fresh or frozen)
  • (1 cup) organic peas (fresh or frozen)
  • (1 tsp) dried thyme
  • (1 tsp) dried rosemary
  • (1) bay leaf
  • (6 cups) Chicken Bone Broth
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Directions

  1. In a large pot, melt grass-fed butter over medium heat. Add diced chicken and brown on all sides. Remove the chicken from the pot and set it aside.
  2. In the same pot, add chopped onion and garlic. Sauté until the onions are translucent.
  3. Add carrots, celery, parsnip, potatoes, and sweet potatoes to the pot. Stir and cook for about 5 minutes.
  4. Return the browned chicken to the pot. Add dried thyme, rosemary, and the bay leaf. Season with salt and pepper.
  5. Pour in the homemade chicken broth, ensuring it covers all the ingredients. Bring the stew to a boil, then reduce the heat to low, cover, and let it simmer for about 30-40 minutes or until the vegetables are tender.
  6. In the last 10 minutes of cooking, add the peas to the pot.
  7. Once the vegetables are tender and the chicken is cooked through, discard the bay leaf.
  8. Adjust the seasoning if needed and serve the hearty chicken stew hot, garnished with fresh parsley.
