Flaky Butter Pie Crust

Long before Crisco and modern shortenings, our grandparents baked with real butter, and every pie had a flavor and flakiness you just can’t get from processed fats. Using butter connects us to that traditional wisdom, turning simple ingredients into something truly nourishing. Bringing back these old-fashioned methods is about more than taste — it’s about honoring a way of cooking that fed both body and soul.

Prep Time: 15 minutes
Chill Time: 1 hour
Makes: 1 double crust (enough for a 9-inch pie)
Ingredients
- 2 ½ cups all-purpose flour
- 1 tsp sea salt
- 1 cup unsalted butter, cold and cubed
- 6–8 tbsp ice water
Instructions
- In a large bowl, whisk together the flour and salt.
- Add the cold butter cubes and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
- Sprinkle 1 tbsp of ice water at a time over the flour-butter mixture, tossing gently until the dough just holds together. Avoid overworking it.
- Divide the dough into two disks, wrap in plastic, and chill for at least 1 hour.
- Roll out on a floured surface and use for your favorite pie, sweet or savory.
