Ingredients
- (4) Pastured Chicken Eggs
- (1 Cup) Oaxacan Green Grits
- (2 Cups) Milk
- (2 TBS) Butter
- (To Taste) Sea Salt
- (For Garnish) Fresh Herbs

Oven Baked Bacon: Preheat your oven to 400 degrees Fahrenheit. Line a large baking sheet with parchment paper. Lay the bacon strips out flat on the baking sheet, making sure not to overlap. Bake until the bacon is browned and starts to ripple, or to desired doneness, about 10 to 20 minutes. Transfer the bacon to a paper towel-lined plate to drain excess fat.

Oaxacan Green Grits: While the bacon is in the oven, bring the milk to a boil in a medium saucepan. Slowly whisk in the Oaxacan green grits, reduce the heat to low, and cover. Stir occasionally to prevent sticking, and cook until the grits are creamy, about 20-25 minutes. Stir in the butter and season with sea salt to taste.

Pasture Raised Eggs: Meanwhile, in a non-stick skillet, cook the eggs sunny-side up or to your preference.

Assemble and Serve: Divide the cooked Oaxacan green grits among four bowls. Top each bowl with an egg and a strip of the oven-baked bacon. Garnish with fresh herbs if desired. Enjoy!
