Directions
Ingredients
- 1 cup dried elderberries (or 2 cups fresh if in season)
- 3 cups filtered water
- 1–2 cinnamon sticks
- 3–4 whole cloves
- 1-inch piece fresh ginger, sliced
- Zest of 1 orange (optional, for brightness)
- ½ cup raw honey (adjust to taste, add after cooking)
Instructions
- Simmer the berries: In a medium saucepan, combine elderberries, water, cinnamon sticks, cloves, ginger, and orange zest. Bring to a boil, then reduce heat to low and simmer for 25–30 minutes. The liquid should reduce by about half.
- Mash & strain: Remove from heat. Mash the berries gently to release more juice. Strain the mixture through a fine mesh sieve or cheesecloth into a clean bowl. Discard solids.
- Sweeten: Once slightly cooled (warm, not hot), stir in raw honey until fully combined. Honey preserves nutrients that high heat can destroy.
- Store: Pour syrup into a clean glass jar and store in the refrigerator for up to 3–4 weeks.
Usage:
- Adults: 1 tablespoon daily for wellness, or 1 tablespoon 2–3 times per day when fighting a cold
- Kids: 1 teaspoon daily for wellness, or 1 teaspoon 2–3 times per day during illness
