Hearty Grass-Fed Beef Chili
This winter, cozy up with a delicious  bowl of Grass-Fed Beef Chili. Why do we love it? Well, it's the perfect way to stay toasty this winter, and did you know, ground beef is the savvy choice for getting the most bang for your buck with grass-fed beef? So go ahead, savor the warmth and flavor without breaking the bank. Happy cooking and stay cozy!

Ingredients

  • (1 lb) Ground Beef
  • (1 Large) Onion, Diced
  • (3 Cloves) Fresh Garlic, Minced
  • (1) bell pepper, diced (any color)
  • (1) can (14 oz) diced tomatoes
  • (1) can (14 oz) kidney beans, drained and rinsed
  • (1) can (14 oz) black beans, drained and rinsed
  • (1) cup corn (frozen)
  • (2 Cups) Beef Bone Broth
  • (2) tablespoons tomato paste
  • (2) tablespoons chili powder
  • (2 tsp) cumin
  • (1 tsp) smoked paprika
  • (To Taste) Salt and pepper
  • Optional toppings: shredded cheese, sour cream, chopped green onions

Directions

  1. In a large pot, brown the grass-fed ground beef over medium heat.
  2. Add diced onions, minced garlic, and bell pepper to the pot. Cook until vegetables are softened.
  3. Stir in the tomato paste, chili powder, cumin, and paprika. Cook for 2-3 minutes to allow the spices to bloom.
  4. Add the diced tomatoes, kidney beans, black beans, corn, and beef broth. Season with salt and pepper to taste.
  5. Bring the chili to a simmer, then reduce the heat to low and let it cook for at least 30-40 minutes to allow the flavors to meld.
  6. Taste and adjust the seasoning if necessary. If you prefer a thicker chili, let it simmer uncovered for an additional 10-15 minutes.
  7. Serve hot, garnished with your favorite toppings like shredded cheese, sour cream, or chopped green onions.
