Directions

Ingredients:

  • 1 whole chicken
  • 1/2 cup unsalted butter, softened
  • 4 garlic cloves, minced
  • 2 tsp fresh rosemary, chopped (or 1 tsp dried)
  • 2 tsp fresh thyme leaves (or 1 tsp dried)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lemon, halved
  • 1 onion, quartered
  • Optional: vegetables for roasting (carrots, potatoes, parsnips)

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, mix softened butter with garlic, rosemary, thyme, salt, and pepper.
  3. Carefully loosen the chicken skin over the breast and thighs, and rub half the herb butter under the skin. Rub the remaining butter over the outside of the chicken.
  4. Stuff the cavity with lemon halves and onion quarters.
  5. Place the chicken on a roasting pan. If using vegetables, arrange them around the chicken.
  6. Roast for 1–1.5 hours, basting occasionally with pan juices, until the internal temperature reaches 165°F (74°C) and the skin is golden brown.
  7. Let the chicken rest for 10–15 minutes before carving. Serve with roasted vegetables and pan juices.
